My New Favorite Dessert that will WOW your Party Guests (and it’s healthy!!)

Hello Tribe!

The holiday season is right around the corner, and while sticking to healthy eating can be a real challenge, if you have some awesome recipes in your back pocket, it’s much easier!

I recently made a galette for the first time – a galette is a fancy French word for a pastry that resembles a pie or a tart. I admit I was intimidated to try this recipe, but it was really sooo easy! I modified the original recipe to add my own touch. This is truly a beautiful dessert for your holiday table, and the crust is so flaky and buttery, you don’t miss the gluten at all! I hope you enjoy 🙂

Happy baking,

Grain-Free Fruit Gallet

●  1 ½ cups cassava flour
●  ½ cup grass fed butter (cut into pieces)
●  1 egg
●  2 tablespoons coconut sugar
●  2 tablespoons coconut oil (melted)
●  1 teaspoon lemon juice
●  |½ teaspoon sea salt
●  1 tablespoon vanilla extract
●  ½ teaspoon cinnamon
●  ½ cup water

Fruit of your choice – I used 3 apples – you could also use pears, peaches, or a combination of berries – about 3 cups
2 tablespoons coconut sugar
●  1 tablespoon cinnamon
●  ¼ teaspoon nutmeg
●  Pinch of clove
●  1 teaspoon sea salt
●  1 teaspoon lemon juice
●  1 egg white
●  Extra coconut sugar

Preheat oven to 400 degrees.

To make the dough:
Combine the following in a food processor – cassava flour, eggs, cold butter, and coconut oil – pulse a few times. Add the coconut sugar, coconut oil, vanilla, lemon juice, salt, and cinnamon, and pulse a few more times. Add the water while pulsing to bring the dough together.

Place the dough in parchment paper and place in the fridge to cool while you prep the filling.

To make the filling:
Cut your fruit and place in a large bowl. Add coconut sugar, cinnamon, nutmeg, clove, salt, and lemon juice. Mix the fruit so that it is all coated with sugar, spices, and lemon juice.

Assemble the gallet:
Remove the dough from the fridge and place between two sheets of parchment paper. Use a rolling pin to roll out a ¼ inch thick, 10-12 inch circle (like a pizza crust.) Arrange the fruit on the dough, leaving a 2-inch border around the edge. Fold the dough up and over on the edges (lift up with the parchment paper and fold over.)

Brush the crust with egg wash and sprinkle with coconut sugar.

Bake for 35 minutes or until the crust is golden.
